I’m one of those millions of people who absolutely love chocolate chip cookies.
There is nothing like a cold day… getting cozy with warm chocolate chip cookies, milk, and your favorite movie… I swear, chocolate is the temporary cure for almost anything. And this morning I was tired, grumpy, cold, and it was “that” time of the month…
In a way this recipe is similar to having oatmeal for breakfast…chocolate oatmeal. Even better, chocolate, warm, soft, chewy oatmeal. And best of all, these little babies are healthy enough you can eat them for breakfast.
Preheat oven to 350 F
Ingredients: (1 big serving or 2 small servings)
1/4 Cup Oat flour (You can use gluten free!)
3 Tbsp Almond Flour
Truvia (to taste)
1/2 Tbsp Honey
1 tsp Vanilla Extract
1 Tbsp Egg white
Semi Sweet Chocolate Chips OR Cacao Nibs OR Carob Chips (Whatever chocolate you want! You can sub raisins or something healthier if you so desire. ;))
1. Mash the banana with the honey, vanilla extract, and Truvia.
2. Mix in the almond flour, oat flour, and chocolate. (You can add more/less if needed; you want a thick consistency.)
3. Bake at 350 degrees F for 12-15 mins, or until they are cooked to your desire! (Adjust according to your oven)
4. Enjoy with your choice of milk and favorite movie. Best. Day. Ever.
Makes ~6 medium sized cookies. And I devoured them all.
