Gluten Free, Grain free, Low calorie, Apple Cinnamon Pancakes!!!

Pancakes, hotcakes, whatever you want to call them, pancakes have been (one of!) my favorite foods since I was really young. (and my specialty too!)

I mean, who doesn’t like consuming a giant stack of fluffy, sweet, soft, goodness that almost dissolves into a sugary nirvana in your mouth?

Okay, maybe these pancakes aren’t that fluffy, but they still are absolutely delicious.

And guess what? They really only require 3 ingredients. Huzzah for simplicity.

Ingredients:

1 Grated Apple

1 Egg

2 Tbsp Almond Flour

1 pinch of salt

—(the rest is optional, but recommended)–

1 Tsp baking powder

1 tsp cinnamon

1 tsp vanilla extract

1. Grate 1 medium apple of your choice

2. Combine all ingredients

3. Heat a nonstick skillet on medium heat. Spray with cooking spray or add coconut oil. Do not crank the heat up too high! (The key to golden pancakes is to make sure the heat is controlled, then they won’t get too dark. )

4. You choose the size of the pancake, flip them as needed and enjoy!!!

Serves 1
